Raspberry & white chocolate ice cream

Ok, I didn’t make this one. I’m not nearly that talented yet. Thanks Simon!

You will need:

  • 250g white chocolate
  • 150 ml cream
  • 500 ml full-cream milk
  • 3 egg yolks
  • 50 g sugar
  • half a cup of raspberries

To cook

Roughly beat the egg yolks and sugar together. Heat the milk in a saucepan until it’s hot, but not boiling. Pour the milk into the egg & sugar mix, and mix them together. Return the mixture to the saucepan, and stir over low to medium
heat until a custard forms.

Melt 200g of the chocolate in a double boiler or a bowl sitting in a saucepan of boiling water. Once it’s nice and goopy, add it to the custard and stir.

Put the mix in the fridge and leave until cool. When cool, pop the whole lot in your ice cream machine and churn it. When it’s nearly done, add the raspberries and roughly chopped chunks of white chocolate.
