Blackberry frozen yoghurt

So tonight I made ice cream. Not ‘I suggested a few flavours then hovered behind Simon while he made ice cream’. I made ice cream. Well, actually no that’s still a lie. I made frozen yoghurt…but baby steps, and check out that colour!

You’ll need

  • 250g blackberries
  • 400g greek/full cream yoghurt
  • 130g of sugar
  • 3-4 tbsp of thick cream

To cook

Put the blackberries and sugar in a saucepan and simmer over low heat for around 10-15 minutes. Once they’re quite juicy and soft blend them up smooth. Next, add the yoghurt and cream and blend again.

Chuck it in the ice cream maker for 20-30mins and you’re done!

So easy, why haven’t I done this before?
