Bitter chocolate biscuits with dulce de leche

It’s cold, I have a cold… and if anymore people I know leave Melbourne it’s at risk of becoming Australia’s Detroit. Yup, I need a hug from Martha Stewart. Make that a Spanish Martha Stewart who wants to give me coronary disease.

You’ll need:

  • 3/4 cup all-purpose flour, plus more for dusting
  • 1/4 cup unsweetened Dutch-process cocoa
  • 3/4 tsp salt
  • 1/4 tsp baking powder
  • 2 tbsp unsalted butter, room temperature
  • 1/2 cup of brown sugar
  • 1 large egg
  • 100g of good quality dark chocolate
  • 1/2 tsp vanilla extract
  • dulce de leche (optional)

To cook

Mix all the dry ingredients in a bowl. Beat the butter and sugar. While you’re waiting for it to go fluffy, melt the chocolate over some water. When ready, add the egg, followed by the chocolate and vanilla. Stir in the dry ingredients. It will form a very thick dough. Turn it out onto some glad wrap, form it into a disc, wrap it up then put in the fridge for an hour.

Roll the dough to a 1/2 cm thick and cut with a cookie cutter.

Refrigerate for another 30 minutes, then bake at 190 C for 7-10 minutes. When they’ve cooled, top with dulce de leche (if you want to).

    I hear Detroit has some awesome 1940’s house dress fashion, and supper clubs with the same decor since forever. And really cheap downtown real estate.

    It looks like you had a nice time making these. Theres something so cathartic about cutting cookies when it works out well. Are they triple layered sandwiches?? You dirty bird.

      Hmm, true, Melbourne will never have cheap real estate.

      Yes they ARE triple layered, and they are dirty (in the good way) :)

    chocolate and dulce de leche is my sort of thing – these biscuits look delicious – I might need some as I am experiencing a melbourne exodus this year too :-(

    Well, last weekend events might only increase the exodus now! They are different, I think they’d be lovely without the dulce de leche
