Chinese braised tomatoes & tofu

Ok, not the best photo, but it was very yummy. Went well with the  caramelised lotus and a bit of fried rice.
You’ll need
  • 300 g packet of firm tofu
  • 3 small tomatoes
  • 2 tablespoons peanut oil
  • 5 cm piece of ginger finely sliced
  • 1 tablespoon brown sugar
  • 2 tablespoons shao hsing wine*
  • 2 tablespoons brown rice vinegar*
  • 2 tablespoons light soy sauce
  • ½ teaspoon sesame oil
  • 2 spring onions trimmed and cut into 5cm lengths
  • 1 pinch of ground white pepper

*Again I used mirin instead.

To cook

Dice tofu into large-ish pieces and cut the tomatoes into quarters. Heat the wok until smoking slightly and add the oil. Sear the tofu on all sides, then add tomatoes and ginger and stir-fry for several minutes. Add the sugar and allow to caramelise, then add the shao hsing or mirin and stir-fry for a further minute. Stir through the sesame oil and spring onions and serve.
