Red lentil & brown rice soup with feta

I started making a red lentil and brown rice soup only to find I didn’t have nearly enough lentils. Consequently, it sort of transformed into a tomato, vegetable, lentil and rice soup… and I suspect better than the original recipe I was following.

You’ll need

  • 1 cup of red lentils
  • 1/2 cup brown rice
  • 1 onion diced
  • 4 cloves of garlic (crushed)
  • 1 potato
  • 1 zucchini
  • 1 tin tomatoes
  • 2 tbsp tomato paste
  • 6-8 cups of chicken or veggie stock
  • salt and pepper
  • 2-3 tsp mixed spices (I used Herbie‘s tagine spice mix that Simon’s mum gave me and it was fantastic. Otherwise a mixture of paprika cardamon and ground coriander would work).
  • Feta to serve

To cook

Fry onion and garlic, add tomatoes and tomato paste followed by the lentils, brown rice and stock. Bring t the boil then reduce and simmer. Add in finely chopped zucchini and potato. Let it simmer over a low heat until the rice has cooked. You may need to adjust the thickness with some additional stock or water.

Serve with feta or yoghurt

    This miserable weather has me looking forward to a soup and DVD weekend…looking forward to trying this one
