Spicy baked eggs

A hearty brunch after a morning of chores…

you’ll need:

  • 1x tin cannellini beans
  • 1x tin tomato
  • 2-3 crushed cloves of garlic
  • 3 tsp harissa (depending on how hot your harissa is). You can also use green harissa in which case add a bit more
  • 2 pinches of sumac
  • 3 eggs
  • some toasted bread
  • dash of yoghurt
  • parsley

If you’re making this for dinner rather than breakfast, add in a layer of haloumi before you add the eggs and some rocket on top when it’s done

To cook

Fry the garlic in olive oil, then add the tomatoes, beans and harissa. Simmer until most of the liquid is absorbed. Add the sumac and stir, then gently break the eggs on top. Cover and simmer until the eggs are cooked.

Serve with a sprinkle of parsley, yoghurt and toast.

    I’m amazed you can be bothered to cook baked eggs – the inner-north is like a giant smorgasbord of delicious baked eggs, with less mess and better coffee.

    Looks delicious though.

    I cant believe you go to cafes for this when it’s so easy to cook ;)
