Fresh raspberry & vanilla meringue

A friend brought a version of this over for dinner once and it was delicious. I thought I’d give it a go.

You’ll need:

  • Around 500g of fresh or frozen raspberries (if using frozen them let defrost)
  • 250ml of cream (beaten with a tsp of vanilla extract or one vanilla bean)
  • 4 egg whites
  • 200g of castor sugar
  • 1/2 tsp cream of tartar
  • 1 tsp vanilla extract

To cook

Whip the egg whites on medium in a blender until they form soft peaks. Put onto high and add the cream of tartar, vanilla and then the sugar one tablespoon at a time. Beat until all the sugar is mixed in and the mixture forms stiff peaks. Spread onto a pan covered with baking paper. Cook on 110 degrees until lightly golden.

Place the meringue on a plate and cover with the vanilla cream and sprinkle with raspberries.
