Vanilla cream cakes (Ange, this is for you)

This is a modified Donna Hay recipe. I made these a year and a half ago and people still ask me about them! Simple but delicious …

You’ll need

  • 185g butter
  • 3/4 cup of caster sugar
  • 2 tsp vanilla extract
  • 3 eggs
  • 1 1/2 cups of plain flour
  • 1 1/2 teaspoons of baking powder

Vanilla mascarpone

  • One tub of mascarpone
  • two teaspoons of sugar
  • 2 teaspoons of vanilla extract

To cook

Preheat oven to 160. Place butter, sugar, vanilla into the bowl of an electric mixer and beat until light and creamy. Add the  eggs, then stir in the flour and baking powder until combined. Put in muffin or cupcake tins and bake for 20 mins or until done.

Mix the mascarpone, vanilla and sugar together. Once cooled, halve the cakes and spread the mascarpone inbetween. Put them back together and then put the mascarpone on top like icing.
