Easy easy raspberry cheesecake

You’ll need

  • 1 cup of ground biscuits-5
  • 40g butter
  • 1/2 cup berries
  • 2 tbsp icing sugar
  • 375g cream cheese
  • 1 cup caster sugar
  • 3 eggs
  • 2 tsp vanilla extract

To cook

Preheat oven to 170 degrees. Line a 12-hole muffin pan with paper cases.

Mix the ground biscuits with the butter, press into cases and bake for 5 minutes.

Mash the raspberries to a pulp with a folk. Stir in the icing sugar. Next, place the cream cheese in bowl of an electric mixer, beat until light and fluffy. Add the caster sugar in a slow, steady stream, beating until combined. Add eggs one at a time and then the vanilla. Pour the mixture into the cases and bake for 10-15 mins
