Tasty thai steamed chicken

This is really great in summer when you can’t be bothered cooking but you want something really tasty. I’ve been trying to work out how to use the dressing on something vegetarian. No luck yet, suggestions?

You’ll need

  • Bunch of coriander
  • Bunch of thai basil
  • Some fresh mind leaves
  • 1 clove of garlic
  • 2 chillies (red)
  • 1 tbsp palm sugar
  • 4 tbsp lime juice
  • 2 tbsp fish sauce
  • 2 x chicken thigh or breast
  • 1 brown shallot
  • iceberg lettuce
  • steamed rice

To cook

Steam the rice and poach or steam the chicken until cooked.

In a mortar and pestle pound up  the shallot, garlic, chili and a very small handful of coriander stems. When they make a paste put them in a bowl and add the lime juice, fish sauce and sugar. Mix it all together then throw in some coriander, mint and thai basil leaves. Pour over the steamed chicken and some chopped up lettuce.

Very refreshing, but garlic breath for days!
