Green lentil & feta soup

This soup is rich and creamy and surprisingly quick to make if you use tinned lentils.

You’ll need

  • 2 tins of green lentils (400g)
  • 2 cloves of garlic
  • stock (chicken or veggie)
  • good quality feta (around 300g)
  • 1 brown onion
  • ground cumin
  • salt & pepper

To cook

Dice the onion and garlic and cook in some olive oil until brown. Add the lentils, stock (around 2-3 cups) and the feta (you’ll need to adjust feta to taste at the end). Cover and simmer for about 20-30mins. It should be thick and very rich. Add salt, pepper, 1 tsp of ground cumin and any extra feta to taste.

    Given a 6/6 at dinner last night. Some recipes should never be tampered with or tweaked and this is one of them
