Mel and Simon’s favourite rice noodles

These noodles are really quick and easy… and popular!

They’re salty, yummy asian comfort food.

You will need

  • One pack of wide rice noodles (the big slippery kind they keep in the fridge)
  • Spring onions or garlic shallots
  • 2 eggs
  • sesame oil
  • several big handfuls of bean sprouts
  • around 3-5 tbsp of soy sauce *
  • around 3-5 tbsp of dark soy sauce *
  • around 3-5 tbsp of oyster sauce *
  • Chilli paste
  • deep fried shallots (they come fried at the asian supermarket)
  • Any or all of the following: deep fried firm tofu, oyster mushrooms, chicken
  • coriander

To cook

Heat a couple of tablespoons of sesame oil in a wok. Add the tofu (or mushrooms or chicken) with a little chilli oil and fry for a few minutes. Mix up two eggs (with a little milk) and add to the wok. Let them cook through then add in a whole packet of noodles, all the bean spouts, a handful of deep fried shallots, all the sauces. Cook until the noodles have gone soft and are a darker colour. Add in the spring onions or garlic shallots (I think that’s what they’re called… they look like grass) and coriander, toss for a few minutes and you’re done!

Makes a good lunch the next day too

* These you’ll have to add to taste, start at 3 tbsp and work your way up. Sometimes you need quite a lot of sauce. They should be quite strong.

    I absolutely love noodles, and this recipe sounds simply delicious and perfect for a mid-week dinner. Do post photos when you make this dish again.
