Fragrant lebanese lentils & rice with onions

I usually serve my chickpeas and chermoula with this rice dish. To bulk up the iron content for those vegetarians, add spinach

Lentils & rice

You will need:

  • 6 tbsp olive oil
  • 2 onions
  • 3 cloves of garlic
  • 1/2 tsp of cinnamon
  • 1/2 tsp of allspice
  • 2 tins of brown lentils
  • 1 cup of plain yoghurt
  • 1/2 tsp ground cumin
  • 4 cups of basmati rice

To cook

Heat the oil and fry the onions (diced), minced garlic, cumin, cinnamon and allspice.

Add the rice, 5 cups of water, and the lentils. Simmer until cooked. Once done, stir in yoghurt (a little butter helps too).

You can also caramelize a couple of thinly sliced onions to serve.
