Bircher muesli
Bircher Muesli was invented by a Swiss doctor, or so the back of a very expensive tub of BM once told me. I think there’s probably 300 different ways you can do it, and you could use any combination of fruit, nuts and juice. Even just honey and vanilla. Some people use cream, but I keep it healthy. This one is mixed berries and apple juice.
You’ll need
- a cup of berries
- 2 cups of yoghurt
- 4 cups of rolled oats
- some shredded coconut
- a few big handfuls of dried fruit (we used cranberries and sultanas)
- apple juice
- you could also add nuts, or grate some apple and add it to the mixture just before eating
To cook
Poach the berries (or other fruit) until soft, then blend with the yoghurt until smooth. Put your oats, dried fruit and other ingredients in a bowl and cover with apple juice (they can really soak up a lot of liquid so you’ll need to just see how it goes with regard to quantities – I topped mine up a few hours later as well). Add in the yoghurt and mix it all together. Refrigerate the mixture over night and it’s ready to go in the morning. You can serve it with fresh fruit, grated apple or just eat it straight!
