Chilli jam mussels

Here’s what you can do with that chilli jam… These are amazing, totally restaurant quality.
You will need:
- 3 tbsp water
- 200g mussels (debearded)
- 1 stalk of lemongrass slightly crushed
- 4 slices of galangal
- 2 kaffir lime leaves torn
- 1 tsp palm sugar
- 1 tbsp fish sauce
- 1 tbsp tamarind water
- 2 tbsp chilli jam
- handful of thai basil
To cook
Bring the water to the boid and add mussels, lemongrass, galangal and half the lime leaves. Cover and simmer under the mussels have opened. Add the palm sugar, fish sauce and tamaring water then stir in chilli jam. Throw in the rest of the limes leaves and basil
