My mum’s lemon semolina cookies

(Which actually come from my aunt who got them from the Sydney Morning Herald).
Lemon Semolina biscuits
You’ll need
- 200g plain flour
- 100 semolina
- 1tsp baking powder
- 1/2tsp bicarb soda
- 110g butter (she uses nuttlex – wonderful outcome)
- 2tbsp olive oil
- 200g sugar
- 1 egg
- 1 egg yolk
- grated zest and juice of a lemon (or even one and a half)
- ½ tsp vanilla extract
- 60g sugar extra (optional)
To cook
Soften the butter by leaving it at room temperature. Mix fkour, semolina, baking soda and salt. Cream butter, oil and 200g sugar till light and fluffy. Add egg, yolk vanilla, zest and jucie. Add dry ingredients. Set aside dough in fridge for 90 mins (recipe says to shape into a disk, but mine was too soft). Roll small balls of dough in sugar (optional) and place on baking ray. Bake at 170C for 20mins or till golden.
